this week, we’re going back into the archives with one of the first recipes i sent here.
we’re revisiting one of our most quietly reliable recipes. it’s plant-based, pantry-adaptable, and built for the kind of week where cooking feels like a chore but eating well still matters.
we’re talking about buffalo-almond stuffed peppers. they come together fast, stay interesting, and hit that sweet spot between spice and comfort.
VEGAN BUFFALO-ALMOND STUFFED PEPPERS
spicy, smoky, microwave-fast
this one’s proof that plant-based can still hit hard. it’s buffalo-forward without the butter, almond-rich without the sugar crash. bitchin’ sauce brings the creamy heat, while black beans and corn keep it grounded.
use whatever color peppers you’ve got. microwave the filling, microwave the peppers, then stuff and serve. it’s a one-bowl flex you can pull off in under 15 minutes.
INGREDIENTS
4 large bell peppers (red, yellow, green, etc.)
1 cup cooked quinoa (microwave packet works)
½ cup Bitchin’ Sauce – Buffalo flavor
½ cup canned black beans, rinsed
½ cup corn (frozen or canned)
1 tsp ground cumin
1 tsp chili powder
salt + pepper to taste
fresh cilantro, for garnish
lime wedges, to finish
INSTRUCTIONS
PREP THE PEPPERS
slice the tops off your bell peppers and remove the seeds.
place in a microwave-safe dish with a splash of water.
microwave on high for 4–5 minutes until softened.MIX THE FILLING
in a microwave-safe bowl, combine:
quinoa, Bitchin’ Sauce, black beans, corn, cumin, chili powder, salt, and pepper.
microwave for 1–2 minutes until warmed through.STUFF THE PEPPERS
fill each softened pepper with the warm quinoa mixture.
press down slightly so it’s packed but not overflowing.FINAL MICROWAVE
place stuffed peppers back in the microwave-safe dish.
microwave on high for 3–4 minutes, or until heated through.PLATE + FINISH
top with fresh cilantro. serve with lime wedges.
add avocado or hot sauce if you’re feeling it.

BITCHIN’ SAUCE

this week’s stuffed peppers are all about the filling - spicy, smoky, and just creamy enough to feel like comfort food. and the backbone of that flavor? bitchin’ sauce buffalo.
buffalo brings the heat, but never overwhelms. layer it onto wraps, bowls, sandwiches, or roasted vegetables. the flavor hits immediately and lingers in a good way.
you can find it in most grocery stores, usually near the hummus or refrigerated dressings.
