SHAKSHUKA CHILAQUILES
bright acid, slow yolk, microwave-simmered sauce

this isn’t brunch the way it’s supposed to be.
this is brunch the way it needs to be: one bowl, no pretense, all flavor.
it’s shakshuka and chilaquiles - tomatoes, beans, and cumin turning into a sauce hot enough to poach an egg. serve with chips. or over chips. or under them. there are no rules here.
quick, easy and convenient
INGREDIENTS
1/3 cup organic crushed tomatoes
1/4 cup organic black beans (drained + rinsed)
1 tbsp organic diced onion
1 tbsp organic diced bell pepper
1/2 tsp organic cumin
1/4 tsp organic chili powder
sea salt
1 cage-free egg
1 tbsp organic cotija
chopped organic cilantro
tortilla chips
INSTRUCTIONS
MAKE THE SAUCE.
in a microwave-safe bowl, combine crushed tomatoes, black beans, onion, bell pepper, cumin, chili powder, and a pinch of salt. microwave on high for 1 minute.DROP THE EGG.
crack an egg into the center of the warm sauce.cover with a microwave-safe plate or lid and microwave on high for 1.5–2 minutes, until the white is set but yolk stays soft.FINISH + CRUNCH.
top with cotija and chopped cilantro. serve with tortilla chips on the side, or crunched straight into the bowl..
