HOT HONEY RIGATONI ALLA VODKA

a perfect recipe for when you’re in a rush

it’s rigatoni, tomato paste, and cream built on the same structure as a classic alla vodka - fat, acid, and heat in proportion.

the calabrian chili paste brings a slow, smoky spice. the honey rounds that edge off, pulling everything toward umami instead of sugar.

it’s balance through contrast - the way italian cooking has always done it, just rerouted through a microwave and simple ingredients.

INGREDIENTS

• ½ cup organic rigatoni

• ⅓ cup water

• 2 tbsp organic tomato paste

• 1 tsp organic Calabrian chili paste

• 1 tsp organic honey

• 2 tbsp organic cream or oat cream

• 1 tbsp organic vodka

• 1 tbsp grated organic Parmesan

• sea salt

INSTRUCTIONS

  1. COOK THE PASTA.
    in a microwave-safe bowl, add rigatoni and water.
    microwave uncovered on high for 5–6 minutes, stirring halfway.

  2. ADD THE SAUCE.
    stir in tomato paste, chili paste, cream, and vodka.
    microwave for 45 seconds, then stir until smooth.

  3. FINISH.
    fold in parmesan and season with salt.
