tthis week, we’re flipping the format a little. because the first episode of my new cooking show just dropped on hypebeast. it’s called WAVES, and it’s basically SUPERMARKET in video form.

the show isn’t about hacks or trends. it’s about using what you have and making it taste better than it should.

episode one: guajillo beef birria tacos. a microwave version that keeps the chile depth, the cheesy melt, and the crispy fold. guajillo brings that brick-red brightness and dried-fruit sweetness; cumin and smoked paprika round it out. it’s weeknight-simple with actual flavor.

GUAJILLO BEEF BIRRIA TACOS

bright chile, melted cheese, microwave-crisp edges

this isn’t the slow-simmer you babysit all afternoon. this is a tight, weeknight edit that keeps the soul of the dish intact: warm guajillo sauce, tender shredded beef, and a tortilla that goes soft-then-crisp in the microwave.

the payoff is that first bite where the cheese stretches and the chile hits. fully microwave, fully SUPERMARKET.

INGREDIENTS

  • ½ cup shredded organic cooked beef (brisket or chuck)

  • ¼ cup organic guajillo chili sauce (blended with garlic, vinegar, spices)

  • ¼ tsp organic cumin

  • ¼ tsp organic smoked paprika

  • pinch of sea salt

  • 2–3 organic corn tortillas

  • ¼ cup shredded organic monterey jack or oaxaca cheese

  • 1 tbsp finely diced organic white onion

  • 1 tbsp chopped organic cilantro

  • lime wedge

INSTRUCTIONS

1. MAKE THE BIRRIA FILLING.
in a microwave-safe bowl, combine beef, guajillo sauce, cumin, smoked paprika, and a pinch of sea salt. cover and microwave on high for 1 minute. stir and set aside.

2. ASSEMBLE THE TACOS.
place tortillas between damp paper towels and microwave 30 seconds to soften. on each tortilla, layer cheese and the warm birria beef mixture.

3. MELT & CRISP.
fold each tortilla in half and place on a microwave-safe plate. microwave uncovered on high for 1–1½ minutes, until cheese is melted and the edges start to crisp.

4. FINISH & SERVE.
top with diced onion, cilantro and Zab’s Original. serve with a lime wedge.

PRODUCT HIGHLIGHT

birria hits different with smoke.

secret aardvark chipotle-hab sauce does it with chipotle peppers and habaneros. it’s smoky, a little sweet, and just hot enough to wake the tacos up.

a couple drops in the beef, or straight over the top when you’re done.
