COCONUT SHRIMP CURRY & RICE
gentle heat, soft spice, microwave-born calm

it’s shrimp, coconut milk, and red curry paste melting into something that tastes like you actually planned dinner - even if you didn’t. serve it over rice, sprinkle cilantro, and let the microwave do what it was made to do.
quick, fragrant, and completely guilt-free.
INGREDIENTS
½ cup cooked organic jasmine rice
⅓ cup cooked organic shrimp
¼ cup organic coconut milk
1 tsp organic red curry paste
1 tsp organic avocado oil
½ tsp organic garlic powder
¼ tsp organic turmeric
sea salt
chopped organic cilantro
INSTRUCTIONS
MIX THE SAUCE.
in a microwave-safe bowl, whisk together coconut milk, curry paste, avocado oil, garlic powder, turmeric, and a pinch of salt.ADD SHRIMP + COOK.
stir in shrimp. cover and microwave on high for 2 minutes.FINISH + SERVE.
serve over warm rice. top with cilantro. eat.
